Chicken Salad

Ingredients: For four servings

  • 2 cups cooked rice  
  • 1 and 1/2 cups of cooked chicken breast cubes
  • 1/4 cup tightly chopped fresh mint leaves
  • 1/4 cup finely crammed fresh parsley
  • 2 cups of diced cantaloupe
  • 8 ounces natural fat-free yogurt
  • 1 clove garlic
  • Fresh lettuce leaves

Direction:

First, let the cooked rice cool down to normal room temperature. Mix the rice, cantaloupe, and the chicken cubes in the salad bowl. On the mixer, make a fine mixture of mint, garlic, and parsley. Add spoonful of yogurt with the mixture and let it be blended well. After that, add the mixture with the rice and toss gently. Let it cool down for 2 hours and sprinkle some lettuce leaves for garnishing.
