Pizza Salad Recipe

Ingredients: For 4 servings

4 halved whole wheat pita breads
4 tablespoons of prepared pizza sauce
1/4 cup of grated Parmesan cheese for cooking and garnishing
1/2 cup sliced fresh mushrooms
8 large romaine leaves
1/4 cup of sliced black olives
1 cup halved cherry tomatoes,
1/4 cup fat free Italian dressing

Direction:

Preheat the oven to 475 degrees and keep the halved whole wheat pita breads on oven rack for toasting. After 2 minutes, turn them and leave them for another 2 minutes. Now you have to add half tablespoon of pizza sauce inside every pita half. Add some grated Parmesan cheese inside the pizza halves and keep two pita halves on the serving plates. Slice the romaine leaves and keep them in a bowl full of Italian dressing, mushrooms, olives, and tomatoes. Now toss gently and stuff the pita halves with the salad. Do not forget to garnish it with the remaining cheese.
